No, my template screen does not look like the linked "event management" screen in your posting.
Basically, it looks like the Filemaker website's "See What's New" ( http://www.filemaker.com/products/filemaker-pro/pro-10-features.html?csr=fmphome_whatsnew ) Contact Management example screen except for DIFFERENT COLOR (gray/blue) and NO FIELD FOR CONTACT HISTORY (phone logging, etc). It simply has fields for all name/address/phone number info, and a photo panel.
I'm new to Filemaker Pro, but not to CRM (am migrating over from Goldmine)....so all I can say about this discrepancy is: Strangest thing...
It's like I have some kind of Beta/legacy-mistake....although I did update from my boxed Filemaker Pro 10 to v.10.0.3 via download from this website..

Well, I think what I have is the "New Intuitive Design" contact management template:
The problem is, intuitively, I can't find a way to be able to insert any records/history of what transpires during a contact (phone call, meeting, etc). It seems that Filemaker shows one template on their web site under "What's New" and then shows another under features.
So I have the "New Intuitive Design" contact management template....but no way to figure out (easily, at least) how to be able to enter histories of contacting.
Any help, much appreciated.

In the "Contact Management" template, click on the Notes tab, click the button "Add a note", and you can enter information about the call. This allows you to have multiple notes per contact.
