Advanced would be overkill for your current needs. However, experience and enthusiasm may make you wish for Advanced.
Database Design Reports, Script Debugging, royalty free runtimes are the main differences.
User access is easily done with either.

As there will be 2 users and understand 2 licences have to be purchased, I think I'll purchase one copy of FM12 Pro first. Create and test. If my enthusiasm becomes restrained I'll purchase Advanced rather than a second copy of FM Pro.
I strongly recommend getting a single install of Advanced for all developers. It's more expensive, but the Debugger and Dataviewer alone can save you hours of frustration when a script fails to perform as expected. For new developers, enabling the debugger and data viewer, then performing a script and stepping through it one step at a time can be a very good way to learn how different scripts work and under what circumstances they may fail to work as expected. (The first time I saw a layout based script trigger pop up a script and perform it in the middle of another script that just switched layouts was a major "aha" moment for me...)
Am I right in thinking I need to purchase two single installs to provide the two licences I require and these licences can be either two of one product (i.e. FM Pro 12) or a mix of two (i.e. FM Pro 12 and FM Pro 12 Advanced)?
That is correct. Remember that the second person can only log on (and by using 'File -> Open Remote') when the other user has launched the file if you are going to use it multi-user.
