Going by your Relationship Graph, for one Rezept (Recipt) record you can have many "Zubereitung (Preparation)" records and for each "Zubereitung (Preparation)" record, you can have many "Zutatenmenge (preparationamount) records. Seems like you need many Preparation records for one Preparation Amount record.
I think you want one preparation amount record for each type of ingredient needed in the recipe. If onions are listed in two different preparation records for a given Recipt (recipe?) record, you want one preparation amount record that lists the combined total onions for the recipe. Other preparation amount records would list the totals for other ingredients. Do I have that correct?
You'll need a different relationship in order for that to happen. Try this relationship and see if it works for you:
Preparation::_kf_ID_RecipeNumber = PreparationAmount::_kf_ID_RecipeNumber AND
Preparation::IngredientType = PreparationAmount::IngredientType
Then you can define a calculation field that uses the Sum function to compute the total amount for a given ingredient for a given recipe.
Keep in mind that you will still need to create a new record in PreparationAmount for each type of ingredient listed in the Preparation table for a given recipe.
