You can import each table into a new table. This will automatically create the table and the required fields. If the first row of the source file contains field names, you can use that too. However, all field types will be Text.
Thanks for the response! I looked a little deeper into this and found the solution (it was rather simple!). Here are more specific instructions of the solution:
1> Do an "Import Records" and choose "ODBC Data Source"
2> Construct the SQL query and then "Execute"
3> In the "Import Field Mapping" window, change the target to be "New Table". Select the option to "Add new records"
This creates a new table that contains all the necessary fields. When I did this with my PostgreSQL database, it also figured out the field types as well! The new table is basically identical to the PostgreSQL database. Yay!
Ah, I didn't realize you were importing directly via ODBC. So it does field types. too? That's interesting.
