Since this information is entered when you are installing, the only way I know of to change it is to uninstall FileMaker completely, and reinstall, entering your name, organization and license key again. Make sure you have your license key before you uninstall!

What about exceeding the number of activations though? Will this be a problem if uninstall then re-install?

With filemaker 9, that can be a problem. Since you are re-installing 10 there's no problem as the latest version of filemaker no longer counts activations.
