      I was wondering if its possible to have specific logins to be directed to a specific part of the database. For example if i want this employee to only be able to access time sheets on my database, so when he logs in all he sees is time sheets.

          You can use File Options to select a script to run when the file opens. This file can check the person's account name and or privilege set name and use this information to select a specific layout and even perform a find to pull up the records appropriate for them to view and edit.

          You can also use Manage | Security to restrict a given user's access so that they cannot see layouts and/or records to which they should not have access. You can research those settings in FileMaker Help.
