Left Middle and Right are one way to grab a specific number of characters from a field.

Left ( zipcodeField ; 3 ) & " " & Right ( zipcodefield ; 2 )
It certainly seems as though Left and Right functions (or in my case Left and Middle, because I'm using 9-digit Zips) ought to do the trick, but when I enter
Left(ZIP; 3) (the Zip code field is named ZIP) into the layout for the mailing labels, what appears in the preview are the words "Left(ZIP; 3), not the first 3 digits of the Zip code. Moreover, when I define a new text field, check the Calculated Value box, and specify the value as Left(ZIP;3), nothing appears in the field. Can anyone suggest how I can use the Left and Middle functions to get the results I'm looking for?
You can't define a calculation in a text box on the layout and you don't want to define a new text field.
You're defining a text field with a calculated auto-enter. That will only update when a dependant field is modified (zip) and only in certain circumstances.
You want a calculation field with text result.
