You can create accounts and privileges that allow users to only view data, or have all fields editable except one. To do this, pull down the File menu and select "Manage -> Accounts & Privileges".
Create a new account, give it a name and password, and under "Privilege Set", create a New Privilege set.
For "Records", select "Custom Privileges", and then you can select a table and set the privileges for Edit, Create, Delete, etc., and then under Field access, select Limited, where you can make it modifiable, view only or not see.
You'll need to experiment with each of these to see which works best for you.
