What you are describing is called a conditional value list. You can list your values in a table, define a relationship and then use this setup to create a conditional value list where the value entered in one field controls what values appear in the value list assigned to the second field.

In the knowledge base article the fields created in the 'Menu' table involve 3 choices- lunch dinner and dessert. My databse will have at least 10 based on different specialties and then each will have about 15-20 opeartions. Do I have to list all the operations (about 100 in all) in the new table?
Yes, but then you would have to list all of them if you used a combined list of operations also right?
Do any of the operations overlap different specialties? If so, there is a way to only enter an operation in just one record but have it link to multiple specialties.
