First detail is that a server scheduled script cannot use an email client application to send out email. It must use an SMTP mail server. So which method are you using?
What account are you specifying in the Admin Console when you try to set this up?
What version of FileMaker Server are you using?
I seem to recall an issue where some users had trouble with schedules getting this message.
I go into the console as the Administrator.

Opening the console as administrator is not the question that I am asking. When you set up a scheduled script, you are asked to specify an account name and password used to run that script. What account did you specify ?
Just to rule out all other factors, you might download and run the free updater to update your server to the latest version.
Yes, I used the Admin account in step 1 (Databases). This was an error. I corrected it by using the ADMIN account for the db and that worked!
We proceeded past that step and completed the schedule.
In regards to the updater, the Server is scheduled to updated next month. Slow process here! ;)
