In FileMaker 10, in the script editing window there's a popup in the lower left corner where you can select "Show Compatibility."
You'll see it shows that your Send Mail (via email client) is not compatible with IWP.
If sending via the user's mail app is your goal, you could try the Open URL script step with a mailto URL.
Thanks for the advice, although the issue is that the email button is linked to a field to send an email to that particular field (so potentially it relates to a couple of hundred emails from all the records), rather than the button sending just me an email, so the mailto URL will not be appropriate here.
Any other ideas under the relevant context? I have looked and apparently the 'Send Mail' script should be compatible with the IWP, so I don't understand why it wont work.

It is not, it will not work in IWP.
Just a little clarification here....
The Send Mail script will work with Instant Web Publishing, but not using the Email client. You need to send mail through an SMTP Server.
At the bottom left of the scripts dialog box, change the "Show Compatibility" pop up from "All" to "Web Publishing". You will then see a number of script steps grayed out. However, Send Mail script step is active, and if you double-click on it, the right side will default to:
Send Mail [Send via E-Mail Client (NOT COMPATIBLE)]
If you then click on specify, you can change "Send via: " pop up from "E-mail Client" to "SMTP Server". This is the only option compatible with Instant Web Publishing.
