They aren't there because you didn't put them there.
In layout mode, arrange the fields on the layout how you wish (Insert>Field) More manual than you might wish, but it gives you the freedom to arrange how you wish and not be tied to a singlw layout design or theme.
Or with table view, you have the option of adding them to the view in browse mode by clicking the Modify button.
Thank you both. The modify button is indeed what I needed to look into for them to show in table view.
Adding them to the actual layout also makes them visible to table view and sometimes this is the better option as it enables you to specify formatting for the field--such as setting it up as a drop down list--something not possible if you just use the modify button as this adds it to the view without adding it to the layout.
