Even worse, when using some of the standard iPad-fonts, one gets extra line-breakes when switching from 'edit' to view (means: Not the same when clicking into a field as when that field is not active)
And there are differences between windows and mac--though not as severe. Each system uses different font metrics and these can affect your results.
When designing for iOS systems, I routinely share the file from my development computer and connect to the file as a client of the hosted file. This makes for a very quick turnaround while "tweaking" a layout design to better fit the specified hardware.
