To attempt to replicate this I created a new database in FileMaker Pro 11 and put a single field on the layout with drop shadow. Next, I converted the database to FileMaker Pro 12:
1. Entered layout mode
2. Highlighted the field
3. Opened the inspector and went to the appearance tab
4. Clicked the "Remove all styles" button (red box in screenshot below)
5. Saved the layout and exited layout mode
After these steps the drop shadow is not longer on the field. See the screenshot below with FileMaker Pro 11 on the left and FileMaker Pro 12 on the right.
Am I possibly missing a step to replicate?
I see. Well, I was doing it by using the Effect dropdown in Inspector, changing it to None. That fails with Drop Shadow. Can you replicate that?

Yes. I can replicate the behavior by changing the field from the drop shadow to none in the inspector on Mac OS X 10.7.4 and Windows 7. The work around at this time would be to use the "Remove all styles" button.
