A quick text indicates that this seems to be the case only if the field you're using is a number field.
A workaround seems to be to set Inspector > Data > Data Formatting > Format to As entered. This is of course not ideal since this will also affect the way the actual data is displayed when the field is not empty.
Good spotting David on the workaround, though the demonstration I showed is for a text field, not a number field. Setting to "As Entered" works nicely around the issue.

I am unable to replicate with field type “text” but I can replicate with a number field. Testing a text field in both Mac OS X 10.9.5 and Mac OS X 10.10.3, my placeholder text cuts off the text instead of displaying a “?” in the field (see screenshot below).

Well, I think this might be a false alert. I created a new minimal file from scratch and I can't repeat the problem. I went back to the original file and deleted the NULL field and recreated it and the problem disappeared. Thanks for following this up.
