File->open Remote->type the server iP address/<filemaker file name>
Seems locally we can connect to the server, but once we are out of the office it just hangs. I'm not used to servers however I know my depployment is ok because everything is checked green (save webpublishing because we did not activate).

If the server in your office is connected to the internet through a router you will have to enable port forwarding on the router. This lets the router know where to send the requests that come in from outside your local network.
It indeed connecting through a router. I went to the settings and put the port forwarding to 5003 however I'm not sure what to put as IP address...my file maker server? If it's that it doesn't seem to work
Usually with port forwarding on the router you put the Servers IP address inside the company.
Then when you connect using your companies Internet IP Address on that specific port, the router will just forward to your Server.
You really need a Fixed Internert IP address, otherwise your IP address can expire and change. You can use dynamic IP address services with some routers that get round not having a fixed IP address.
If you host a mail server in the company, you can also use your Domain name and port number to find your Internet gateway.
