HMM I also have FileMaker 11 installed. Windows 10 is confused about their being two Filemakers and neither app shows up in the Default app list and only Filemaker 14 shows up in the start menu.
The file association list shows fmp files as associated with "Filemaker Pro Database" and NO fmp 7 file association
There is no issue opening files with FMPRO 11 however.
So it is definitely a Windows 10 glitch.
I can work around it using the Favorites file choice

I have also been unable to reproduce this on Windows 10 with FileMaker Pro 14.0.2. The File Association list does show ".fp7" and ".fmp12" separately, but not this "fmp" format you see. I was also unable to find previous reports of this issue.
You might try uninstalling both FileMaker Pro 11 and FileMaker Pro 14, reboot the machine, and reinstall.

The "issue" that FM installer replace shortcut in start menu is not only on Windows 10. Always does it perhaps from FM7.
