Upgrading to FMS14 and Java

I have a customer who uses FMS12 on a Mac Mini:

Mac mini Server (Late 2012)

2.3 GHz Intel Core i7

8 GB 1600 MHz DDR3

I forget what OS the machine was running but in preparation for upgrading to FMS14 he installed Yosemite (10.10.5).  Java is not pre-installed in Yosemite and the only version I can get is the current version (Java 8 update 60).  The issue is that FMS12 Admin console needs Java 7 update 75, which is not available.

Although I can close databases and stop the server via the Terminal, I don't think uninstalling is an option via the terminal (I didn't see it anyway).

The only other method I can think of is to do a factory reset of Yosemite.  Of course, I'll move the files to an external hard drive first.  Am I missing something or is this my only option?
