Set up a second row with values in them. Format the cells in the spreadsheet to be what you want them to be (text, number, date). Filemaker should then pick up the field type.

Do you know if there are any documentation out there as to what the default max is, for example, the size of a TEXT field? Or can we somehow force a NUMBER type to TEXT? Just wondering if what kind of logic FileMaker uses to decide the field type from the actual data and if there are ways to override.

In FM 12 a text field can hold up to 1 billion characters limited by memory. See this link for the technical specifications Technical specifications of FileMaker Pro 12 and FileMaker Pro 12 Advanced | FileMaker.
Once you create the table you should be able to just change the field type from NUMBER to TEXT and the data should carry over.

This is almost certainly NOT what you want as a final result in Filemaker.
A database needs a normalized design with small number of fields in dedicated tables.
Doing the above import may be a good starting point; and might be a necessary starting point.
But the hundreds-of-fields table should broken out into proper tables.
To assist you with that we would need to know more about what these hundreds of columns represent.
For example, consider a spreadsheet with columns for month and year results for sales history across 10 years.
That would be broken out into a table with four fields: Product; Month; Year; Sales.

Understood on the advice on the normalization. I think it is okay this time as these are static fields in a report of metrics.
I do have anther question in regards to hiding/showing objects, specifically a row of objects, and the behavior when printing (hardcopy or PDF) so I'll post another question.
