You can type special characters into the field the same way you type them in any other program.
If you're looking to programmatically enter data by a script or calculation, you'll need to refer to the Char() function of filemaker:

In Windows you can open the Character map, find the symbol you need and paste it in the text box.
Or you could just search for the symbol you want online, and copy/paste it into FMP.
On Mac there is a fantastic tool out there:
there is a similar method to see these on Macintosh:
in Popchar you can even draw the char you're looking for, here I used the shift key to draw lines but you can freehand draw what you're looking for. Beat that !
