You can use SendMail functions to email people and provide different text or addresses or attachments for each receiver.
Hi Mike, Ive just noticed another thing which perhaps I could use? If I make another field for their email addresses, can I do a find to items relating to their name, and then use the collect addresses across found set button, in the email setup screen?

Yes, you can, but then everyone will get the same email.
But If the found set is all corresponding to the same person? or will that not work.
My suggestion would be to create a report layout to display items sorted by person, then print current record reports, perhaps as PDFs. Based on my reading of your post, I'm pretty sure that's how I would approach it.
Currently I have a layout with the desired fields, and a sub-summary part showing items by assignee. It shows all items and who has them. Do you mean do the sort first then display it on the report layout then save as PDF and print?
Yes, that's pretty much it. You should be able to set up you report process so that each person's report is separate.
The part i'm stuck on is ok all items are sorted by person on the layout, but how do I take this and email each specific person and say here are the items you have been allocated.
eg. If I have a sorted list showing
Person A Person B Person C
Item1 item 59 item90
Item2 item48 item30
Item3 item23 item49
I want to create an email of the found set for each person and email it to them as a pdf. I have an email field for each person. How do I loop through the found sets and then for each found set send an email?
So you actually have each person's data in a column like that?
No its a vertical list I was just showing it like that to help show what im trying to do
