Short answer: Yes, you have to create a table layout (duh). (Unless you want to run an ExecuteSQL query every time through the Data Viewer, which is possible.)
Probably the fastest way to create layouts is to use Manage Layouts and just create as many as you want sequentially. They'll show up with the default theme, and you can arrange them from that window as you see fit.
Thanks. I thought that might be the answer. I've also been looking for ways
to script a new layout where I could just switch out the names, but I'm
guessing that isn't available. I appreciate the help.

You can duplicate the layout, delete all the fields, and then use the Field Picker to drag all the fields onto the copy. That's pretty fast. Make sure you change the layout context appropriately.
