Hi. In layout mode, go to View menu and choose "Show Page Breaks". You'll see a page break as a dotted line at the bottom of the layout. If your layout height goes past that dotted line, you'll get a 2nd page when you print or in preview mode.

I knew it was simple... But I did not realize that once the page got stretched that it does not automatically return to its size!

Welcome. Its a bit annoying those page break indications are not defaulted to On. They used to be in 12 and earlier. Not sure why they got shut off.
I suspect it's because they are really only relevant to printing, and FM now encourages—and facilitates creation of—specific print layouts.

The layouts that are 'Print only" are Labels and the report layout. If a user needs to print the detail of a student, for example, a developer will make a report that is a form view for printing.
Even Print Only layouts don't come with the page breaks.
