There are a number of date functions available for custom formatting date data into text:
Something like "Tuesday January 12, 2016", would be:
DayName(table::date) & " " & MonthName(table::date) & " " & Day(table::date) & ", " & Year(table::date)
Although there are also a number of custom functions that can work well too:
I take this to mean you want the leading zeros.
I do this as a text result:
Right( "00" & Month( myDate ) ; 2 ) & "/" & Right( "00" & Day( myDate ) ; 2 ) & "/" & Year( myDate )

I apologize for not being clear. I was trying to retain the written out day, month, and date format (Thursday, Jan. 21). I could set that format in the actual field, but when using the set variable and set field script steps, the format was reverting to 1/21/2016. I was able to use Mike's formula to get the data from the date field into the calculated text field as I wanted it in text form.
