Before you start controlling Screen Orientation you may want to check: Set Allowed Orientations is not supported in iOS 9 | FileMaker
Also you would need FileMaker Pro 14 to use Set Allowed Orientation, and Pro to use Show/Hide Menu Bar, and Show/Hide Toolbar but Advanced is unnecessary.

Though TSP is correct, only Advanced lets you Customize Menus to control menu actions. It also lets you put the file's screen into Kiosk mode so it can only be used via the layout objects. Well worth the price of admission to Advanced.

When you say you want control over screen orientation, does that mean:
1) You want to lock the screen and prevent the device from rotating the display when the user rotates the device?
2) You want the solution to adapt automatically to changes in orientation?
As TSP pointed out, the former is an issue due to Apple's policies. But the latter you can do using anchored objects, separate layouts with Script Triggers, etc.
I have a couple of data collection solutions that are used on the iPad with FMGo and it would be useful to lock the orientation to Portrait. We presently just have the user Lock the Orientation on the iPad when using the app.
I have used your #2 suggestion for other apps.
