What font are You using?
FileMaker needs to have the specific Font that you have on your layout on the Device where you are using FMGo. If you use a Font that not exist I recommend you to stay with web safe fonts like Arial, Helvetica, Verdana that exist on all computers and devices.
Try making the font size on the layout a bit larger. If the text size is small, the difference between bold and plain style may not be observable....

When I am designing for iOS (and Windows/Mac) I've found it useful to prepare a test file with all the typefaces I am considering, together with their variations like bold, italic, etc., (with a descriptor field with the typeface name and variation next to it, with a notes field to describe the sometimes surprising observations on the differences).
I then can view the often radical differences when I load this onto the different platforms. It helps avoid surprises down the road, as iOS in particular cannot render a number of "conventional" desktop typefaces, or their variations, and will substitute another typeface. Also note this is a moving target, as the iOS typefaces change with the different versions.
Hmm, my text sizes are around 24pt.
Yep, so the problem was I was using Tahoma as my font, I changed it to Ariel, and it worked!! Thanks everyone for the help!
