It could be a script maybe? Value changed through the set field script step don't trigger OnObjectModify or OnObjectExit. If there is no Commit Records step in the script, it wouldn't trigger the OnRecordCommit trigger either.
Seems like there isn't an easy way to find it then. I'm going to keep the window open and see if I can find the exact time that the information changes, then check the server's Log Viewer to see what was run around that time.
Then I can parse through those scripts and see which one may be modifying the fields.
If you can think of an easier way, please let me know.

If your scripts are running locally and you have FMP Advanced you can let the debugger open and it will prevent any script from running without you going through them.
But if you suspect the script in question is run on the server as a schedule, then your idea makes more sense.
I just found the script.
It's an automatic script run every 30 minutes on the server, which triggers a local script, so the debugger would work on the local script.
It's importing data from an excel spreadsheet somewhere in the cloud. I'll have to track it down from there, but this at least solves my problem of why things were reverting.
