That new folder needs to have the right permission for you to be able to change in FileMaker Server. After that you can change your default folder.

It needs to have specific FileMaker permissions. Have a look at the folders where FileMaker Server it´s file folder and make sure permission are the same. Then you can change folder inside FileMaker Server to your new folder.
For example I split up my FileMaker Server computer to have different hard drives
C: - Running OS
D: - FileMaker Server + Live databases
E: - Backups
F: - Files
Those hard drives need to be connected to your computer at all times and not a external hard drive.
I've git two drives :
The first for systme, second for data, and backup.
The permissions are strictlry the same between data with fmp12 data file et container folder.
Maybe i have to restart server ?
I'v seen in fielmaker docs that we can't change default container remotely ....
So in a base runing on the server, you have to stop it, close it , download it, change containers configuration et reupload it ?
What do you mean by remotely? Are you inside the FileMaker Admin Console?
Inside the Admin Console, i change the configuration in Databaser server -> Folder
But in the file myfile.fmp12, i have to change in file -> manager - container ?
Inside FileMaker Server Admin Console you say where you Main folder is, then in manage container you can then have different Sub folders for that specific container

Yes you can, but inside the folder you setup On FMS
you just choose Calculated folder
