Count ( PortalTable::anyNonEmptyField )
which preferably is the primary key of that table, or the foreign key for the parent table, like
Count ( Booking::id_travel )
You can also create a summary field in the portal table with 'Count of' and place that as a related field on the layout with the portal (but outside of the portal, since you only want to see that value once).

Well, why not try the second approach?
In the join table, create a new field of type summary and define it as 'Count of': join_ID
Then put it under the portal from your first screenshot.
