Not possible within FileMaker. Here is another feature request for that, which you can upvote: Customize Zoom Level percentages in FileMaker Pro
Your best bet for now is to either:
1. Change your resolution in the Mac's Display System Preference
2. Begin working with the Mac's built-in Zoom settings to manually zoom in & out on demand (in the Accessibility System Preference).
Yes, "Change your resolution in the Mac's Display System Preference" works but it feels like a dirty work around ...
In a pinch, I've used the print (page) value (%) to see what these might be. Print to pdf and paste to layout background. At least you may have some guides.
But for data entry, it can get complex to zoom odd sizes.
In addition, another tip: I may use the OS zoom features to differing sizes (off 100% layout zoom) just to see what something may appear somewhat at these zooms.
