Assuming that you mean changes to the design of the file as opposed to the data stored in it, See the Inspector Pro tool produced by BeezWax. It can compare two copies of a FileMaker file and tell you what is different according to a demo that I saw a few months ago.

There is nothing built in for that. But if you research the phrase "audit trail", there are a number of discussions and third party tools that deal with that issue.
Describe what sort of change tracking you need. Is it as simple as knowing whether new records were added or do you need to know when and how a record was edited.
Check NightWing Enterprises and find their Ultralog demo file. A very good audit trail method.

Then look around, test a few commercial solutions. They are well worth the money

Unless the script itself logs the change as well as makes the change.
I'd like to see a script that does a replace field contents on 1M records and logs it.
Probably the best bet would be to collect the found set UUID and store in a log record the fact that at (timestamp) I changed all these records (uuid list) from whatever they were to (formula).

If you set an automatic update field in records, each time record is modified, this field is updated. If you collect updated field since a date, you will see that field has been changed. Add a user updater field to know who is the last person that updates this field.
