Anyone know how to disable Menu functions so my users can't play?
Set it up to run in Kiosk mode for them.

Yes. Kiosk mode can be used on both Macs and PCs. It does require that each user have a less than full access account and password for accessing your solution. Full Access users such as yourself will still get the menu bar. It also requires that you use FileMaker Advanced to setup the file in Kiosk mode.

Surely you know how to make copies of files on your computer? It's the same for Filemaker.
Plus, if you are not hosting the file from a server, you can use Save a copy as... from the File menu.
If you are hosting from a server, get a back up copy of the file from your server.

I like to:
1. shut down FM altogether (avoid any possible open files)
2. via OS, duplicate a file and rename with appended today's date and time:
this makes the file names sortable in a way that I know what's "current" and when I duplicated the file.
it's my "local copy" backup scheme. I so the same with any kind of file (PHP, HTML, etc.) that I may need a 'local backup'. Step one is vital to ensure you are backing up a file that is complete at that point and time.
p.s. as others have stated, on hosted files use FMServer backup and only "locally backup" from files on a backup directory (these are already closed and current at point-in-time).
I only have filemaker pro 15.0 ,will can the kiosk work in this software?
Once set up, Kiosk will work in FileMaker Pro, But you need Filemaker advanced to set up Kiosk mode in the first place. Anyone making more than very limited changes to a FileMaker solution really needs to use FileMaker Advanced. It's much more expensive, but the added developer tools can save you hours of debugging effort and allow you to build in new features (Kiosk mode, custom menus, custom functions ... ) not possible if only using FileMaker Pro.

You can hide and lock the tool bar, but without Advanced, that's about it. You might look into setting up privilege sets that limit what the user can or cannot do once they have used an account name and password to open the file. There is a setting inside the dialog for setting up privilege sets that can limit what menu commands are available. Must developers find these settings too crude and opt for custom menus or Kiosk, but you might find that you can limit things enough to make this work for what you need.

Since you do not have FileMaker Advanced--what I stated at the beginning was necessary in order to to this, you can't do this as there are no "Developer Utilities" in FileMaker Pro--only in Advanced.
