set variables to choose a printer

I have two printers using different sized papers.  Let's call them printer1 and printer2 and many files and scripts print automatically to a specific one based on the output needed.  If printer1 breaks, I would like to replace it and then by changing a "set variable" or some other method just once in my MAIN MENU; then have every file and script elsewhere in my program, print to the new printer without having to update every PRINT command.  Is this possible and how?
