Our Development and Testing departments are aware of this issue under the Mac operating system. I have added your post to the original report. When more information becomes available, I will post again.
One option is to go into System Preferences -> General and make sure the Appearance is set to Blue (not Graphite).
Another option is to go into System Preferences -> Accessibility -> Display and make sure the checkboxes for "Increase contrast" and "Reduce transparency" are unchecked.
Changing the appearance to Blue instead of Graphite has no effect (even after restart).
Unchecking Increase Contrast & Reduce Transparency does make the text visible (regardless of the blue or graphite appearance). But (for me) the field picker isn't worth the sacrifice in general readility of my screen.

I love the work around recommended by steveromig to screw up your entire Display settings (Contrast / Brightness) in order to read the field picker.

I can confirm this issue was not addressed in FileMaker Pro 16.0.1.
Here is an AppleScript that toggles Apple system preferences on contrast, that makes the field picker dialog workable; not tested in FM116 as yet.

tell process "System Preferences"
click checkbox "Increase Contrast" of window 1
click checkbox "Reduce transparency" of window 1

You will need to allow script editor to on in accessibility settings under "Security and Privacy" to work.
If you compile it, you will need to allow the compiled applet access, access under accessibility settings in "Security and Privacy" to work.
