I want to hide my dev server from filemaker pro/go/webdirect clients so they don't log into the wrong one.
I only want it to be accessible by it's ip and not show up in local hosts.
Yes, it is the server's bonjour that makes it available in the "local hosts" on the same subnet.
Installing bonjour is an option when you install FMS. Once it is installed you can't just disable it because it is a dependency of the FMS service itself. Luckily you don't have to reinstall FMS either; I've written up the steps in a blog post:

afaik if the server is windows and you disable bonjour, you won't see it. I might be wrong, though.
Removing bonjour is the simplest way. Alternatively you can put your dev server on a different subnet.
It is windows, would you remove/disable bonjour on the server itself?
If avoiding accidents is the only concern, you could just keep the files from being visible in the dialog. Developers can select the server and enter a file name to open a hosted file, but noone should be mistaking developer files for the live copies.
