Script step should look like:
SetField( ParentTable::text_field ; Substitute( List( relationshipToPortal::documents_assigned) ; "¶" ; ", " ) )
Sum is for summing numeric values not listing them.
Substitute( List( PortalTable::PortalField ) ; "¶" ; ", " )

Is there a way to combine two different portal fields into something like this?
So using above example:
DocName & "(" & DocDateAssigned & ")"
Output would be:
Text A (May 1, 2017), Text B (April 10, 2017), Text C (March 1, 2017)

You would need to concatenate that in the child (portal) table first, then make a list out of that field same as you did before.
Alternatively, you could use the ExecuteSQL() function to create it in that format on the fly. This has been the standard whitepaper for how to use that function:
