I guess you mean multiple CPU's on one motherboard? How a system utilises multiple physical CPU's isn't dependant on the application. The Server handles the distribution of CPU resources.
FileMaker server is multi-threaded so it does utilise multiple CPU's. It doesn't matter if they are multiple vCPU's, multi-threaded cores, or multi-cores, or physical CPU's on the same motherboard.
In other words, the choice to have multiple CPU's or a single CPU with lots of cores is up to you.

For the application it doesn't matter wether the CPU cores are bundled together in one CPU die or split on the motherboard.
