I'd like to get information on Opportunities, Accounts, etc out of Salesforce and into Filemaker for better analysis. I'm not familiar with linking other programs to Filemaker with API's. Can anyone advise how I go about this? Many thanks

Like with any integration you have two options (given that both Salesforce and FM offer APIs that you can talk to):
1) you do the coding inside Salesforce and talk to FM from inside SF
2) you do the coding inside FM and talk to SF from inside FM
That's the first choice you'll need to make and what the coding looks like depends heavily on that choice. You'd make the choice depending on what environment you are most familiar with.
I'm going to guess that you'd rather the coding inside FM. Then start by learning what the SF APIs look like and how you talk to them: REST API - developer.force.com
Doing this kind of REST API integration from inside FM is fairly straightforward with FM16's capabilities, or if you are not on 16 yet, using a plugin like the free BaseElements one. The mechanics of how you do the talking is usually not where you'l find yourself spending a lot of time, it'll be in understanding what to ask for and working with the results.
