Turning off Spotlight

We are moving our FileMaker Server to a new iMac running High Sierra. Our old server is running version 15 and we plan to install v.16 on the new one.

The Server installation instructions recommend turning off Spotlight. We have not been able to find anything about turning off Spotlight in High Sierra, but tried using the instructions we found for Sierra.

First we turned off the System Integrity protection (since we got an error with it on) and ran this command in Terminal:

sudo launchctl unload -w /System/Library/LaunchDaemons/

We turned SIP back on.

However, Spotlight still appears to be fully functional. It still launches apps. It still found a new document created after it was supposedly turned off. How can we tell if it's really off or not? Is there something different about Spotlight in High Sierra?
