Getting a running total

Good day. I have been tasked with doing a database for a dental company's stock. Everything works except for one small detail. Here is a scenario:
Product Category: Disposables
Product Name:  Surgical masks

 

There are 10 in stock and they order another 20 which gives you 30 in stock
3 are withdrawn for use which leaves 27 in stock. After a while another 10 are ordered. When I do the calculation it gives me 37 when in fact it should give me 40. I have searched so many forums and sites yet, either I have missed the solution completely or am having a brain dead moment.

 

How do I get the running total to 40 (for this scenario) and not 37. Bear in mind that there are over 600 products in stock in 9 categories.
