I would like to create a menu (to go to the different models) in the model layout.
I currently make a menu in the header an copy it in each model ...

Please describe your design in much more detail. We don't have any idea what a "model layout" is nor how you have set up your tables and relationships.
The DataBase structure is nothing to do with this question.
It is just a question of "navigation" from model to other model.
For exemple I have a model (form) that comes from my "products" table and an other one that comes from my "suppliers" table.
When I use my database I need to go to these forms (models) and then I currently use buttons with the "activate the model" function.
BUT I have to copy/paste these buttons (menu) in all my forms (models) and it is very annoying when I want to add a button in this menu as I have to repeat the copy/paste action ...
Then it appears that you are referring to layouts rather than "models" which sounded like something else entirely. Perhaps you are translating your posts into English and the translation is modifying what you are trying to say as "model" isn't a FileMaker design term normally.
I still suggest describing your design in more detail. "activate the model" suggests possible design issues with how you have set up your solution. For example, if "model" refers to both a product's model and a layout for the same, it might be that you are trying to add a new layout everytime that you add a new model and this is very likely an unnecessary way to do this--but I'm just guessing here in the absence of any real information.
Copy/pasting buttons to put then on more than one layout is a common task in FileMaker.
It is possible, however, to set up a global field with a value list of possible layouts to which you might want to navigate. A script trigger on the field can then take you to the layout select from the value list when you select one. Then you might only need keep the value list up to date rather than make multiple changes to multiple layouts every time that you add a new layout.
