Moving from locally-hosted separation model to FM Server

Before I ask my question, here's a reference point:


I'm a small business owner and have developed my own FM solutions forever, with occasional hand holding from a local FM developer. (I expect more hand-holding is in my near-term future!)


Currently, my computer hosts my DATA file. I have a separate UI file, as does my assistant, who logs in to DATA remotely from her home office. Works great.


Now we are both moving to the same office, and more users may be added, so I've purchased FileMaker Server to install on the server (Windows version).


Once the server software is installed, am I only uploading only the DATA file onto the server, continuing to open the UI files from each local machine? OR, do I install both UI and DATA files on the server, and use the OPEN REMOTE function to open the UI file from each local machine?
