There's no documentation yet on how to create other types of fields other than the ones in the guide so far. I imagine there's a way; you'd have to play with and guess at the tags. And you have the added complication of having to create the OTHER field, the one the summary field is dependent on.
You really might not want this since both the summary field and the field it is depending on will be created in every new table.
I honestly can't see adding any more fields other than the 5 they've provided already to every table, as the default fields.
If you really want, you could try to play with the tags in the default fields, your custom-default fields xml file. But I wouldn't recommend it.
Sample of a weighted average:

Allowed values for the operation attribute are Total, RunningTotal, Average, WeightedAverage, Count, RunningCount, Minimum, Maximum, StdDeviation, StdDeviationByPopulation, Fractional, FractionalSubtotal, and List (but make sure your summary field uses datatype="text" if you're using List).
Only WeightedAverage and FractionalSubtotal use the additionalField element. In theory, RunningTotal should also use additionalField when the summaryinfo's restartForEachSortedGroup attribute is "True", but I haven't been able to get that one to work.
Summaryinfo can also have a summarizedRepetition attribute of "Together" (default) or "Individually".
