From Terminal run the following command.
sudo launchctl stop com.filemaker.fms
Filter the activity monitor for “FMS” when you see all the services gone it is all stopped.
Your title is a little confusing. FileMaker Cloud does not run on Mac, it runs on Linux on AWS, and it auto-updates without requiring you to do much of anything.
So we're assuming that you are not talking about FileMaker Cloud but the regular on-premise FileMaker Server for Mac.
Ideally, before you issue the command that bigtom outlines: make sure to run one more backup, and disconnect all clients and then close the files: you want to make sure they all close properly before you completely shut down FMS.
