As mentioned in several places in Filemaker manuals, the LABEL of a button cannot be changed - all other attrributes like, BOLD, Font, Colour etc can.
So how to change the label?
If you want to change the label of a button, then use a button bar instead of a single button object, even if you have just want one button. With a button bar you can calculate the label in the Button Bar Setup dialogue, so it can change it based on any conditions in your database.
You can also use the Text Formatting functions in your calculated label to change the size, colour and style if required, also using the inactive and active state of the button to show different styles.
Other ways you can change the styles of a button is to use conditional formatting, Format > Conditional...

I also added an example file in a previous post that has some text style formatting in a button bar, along with inactive and active states, that may give you an idea of what you can do.
I generally prefer the button bar, but you can also do this with regular buttons and grouped object buttons as well.
You can use button set up to set up a field as a button and the the field’s value can be modified to change the label.
You can also define a button‘s label to be either a merge variable or merge field.
Finally, as long as the layout is not used with WebDirect, you can simply superimpose either transparent merge variable or field object (with access blocked) on top of the field.
None of these are better than the simpler single segment button bar, but they are often found in older solutions.
Note that all of these features illustrate a basic design set up of FileMaker layouts, unlike say Visual Basic forms where your code can directly modify form object properties, many Filemaker layout objects can be set up to reference the value of a field or variable. Thus, to modify them, you modify the value of the field or variable.
What I have at the moment are 2 buttons, that Hide/Display when Inactive/active. Whilst the ButtonBar allows the LABEL of the button to be changed, it takes up more space on the form or table - or can it set to only show the active part of the button bar?
A single segment button bar isn’t any larger than a single button.
