Are there draw backs, cautions, dangers from Granting Full Access Privileges in a Script?

a) it can be a risk. A hacker might find a way to perform that script so keep "worst case scenarios" in mind.
b) "full access" only applies to data in the current file. If you use data separation or some other modular approach where the data accessed is from a different file, "full access" in the interface file does not grant full access to the data file. You'd need to use either a different way to give the script/user the access needed or perform a script in the other file that has "full access" granted.
