Is it possible to import Excel data to become a Table by itself in FileMaker? Instead of the data becoming field inputs.
Yes you can create a table on import. When you choose File > Import Records > File… and select your Excel file for import, you will see the Import Field Mapping dialog. On the left will be the data from your file. On the right you can choose an existing table or create a New Table:

Does this mean that if I do not select that option, FileMaker is naming my table fields for me? And the first record (which are my headers in excel) become field inputs?

That's correct. If you check that box, then FileMaker will not consider the first row data. Unchecked, FileMaker thinks the first row is data, and since fields have to have names, it will name them rather generically.
