In previous versions of FMP, I was able to format a date using the format pull down. In FMP 11, date is not in the menu.
How do I change the format of the date from 3/1/12 to March 1, 2012?
Use the Inspector.
Inspector > "Data" Tab > at bottom under Data Formating...
Choose the calandar icon and select the format you wish...
Custom format takes some trial and error to get what you want if the pre-formatted samples don't do it for you.

I am in the Inspector now, but that section is grayed out. I have trying different ways to get it to be active but on luck so far.
I am using the date indicator //. I have highlighted, not highlighted, deleted it. It stays grayed out in Inspector.
I'll keep fussing with it now that I know the general idea.

If you mean you have a text object containing a merged date symbol, select the text object (not any specific text within it), then apply the formatting.
I think you may be using very exact FileMaker "speak" that I don't know.
All I know is that if you type // in a layout, and look at it in the Browse mode, it displays the date.
The format however, is 3/15/2012, not March 15, 2012, like I'd like it to be.
Previously, I'd highlight the //, go the format pull down menu, and select the kind of date format I wanted.
When I try that now with the Inspector, it is grayed out. But, I'll keep trying different approaches.

No, not exactly. There has been no change from previous versions in this aspect. Try this: click on empty space in order to deselect, then click the // once, so it's selected - with four small black rectangles showing at the corners. Nothing should be highlighted.
