I initially thought that getting hand recognition would be a great idea too when FMGo first came out, especially when you could add signatures. But I think Apple has moved away from such things ever since the Newton because humans can more efficiently communicate vocally. I suspect FileMaker will be more likely to get voice recognition than hand writing recognition. But that is just a guess by someone who has no inside knowledge and is just speculating.

You can transcribe voice to text into FileMaker Go fields on the 4S iPhone (and the new iPad? I haven't tested it yet).
Handwriting recognition is a bit different from getting signatures into FM Go container fields. And considering how illegible my and others' signatures are, I don't think text transcription of signatures will happen anytime soon.

I used a program called Jot™ on my Palm devices and it worked great. One could write just about anywhere on the screen and it would input the text right into the field you were working with or the current cursor location.
Tablets were made to write on.
