Can you run this export as a scripted process and name the output file using a $fileName variable in that script? I have found I can control file extensions in file names that way most of the time.

I use a script to export the contents of a text field to a text file.
The function Export Field Contents does this automatically.
Create the filename to have .txt as the extention.
Then through a shell script to textutil, I can convert it to other formats such as .DOCX.

Yes whenever possible use variables to name saved files in a scripted process and then you can name them how ever you need to.
